    • 今天上樱桃果果帅哥家里借管钳, 一进门就闻到香味! 啊, 传说中的帅哥大厨作品就在眼前, 相机还摆在饭桌上... :) 只恨晚餐吃得太饱, 要不可以蹭几口菜呢....

              • 偶还真没用过竹子的,不晓得竹案板有什么讲究。
              • another tip for you, buy some flexible cutting board,
                for everyday use, like chopping vg or meat, you may simply use them and wash up right away; only for heavy use, you need the wood ones, certainly you need both. then every month, throw away the flexible ones, get another pair; the smaller one, you may cut an apple every evening for your little one. I do the same for almost 15 years for my son. for the wok, my secret weapon is the one bought in costco a few years ago, made in US, Ameriware, Ti. &Ceramic, go online, to order one, trust me on this one. you look like a nice guy, just need some good advices.

    • 果果,我猜tidyyard的意思是炒这个菜时要淋或喷些清水,放盐、糖、鸡精或高汤、(香油可要可不要),少放或不放酱油,最后打欠出锅。这样菜的颜色就会保持青绿的健康色,更加presentable。欢迎大师傅们斧正。

    • 偶以前炒蜜豆、荷兰豆喜欢配炒鸡蛋、腊肠(片),现在腊肠不怎么吃了。你这蜜豆配胡箩卜还是很经典的。是我还会把你的胡箩卜片再切一、两刀,和蜜豆的宽度差不多。

      • 偶寻思着换一套practical, safe cookware有一段时间了,就是还没做什么功课。听了太多有关non-stick coating的负面的东西,心里有阴影,;)虽然家里还用着non-stick wok。还要再多了解了解。
        • seeing is believing, this non-stick is not THAT non-stick.
          I was falling a little toward that handsome demonstrator that day I guess, :) He invited me to go back in one week to let him know how much I enjoy that wok... but ... a few years have passed by, still like a new one. Thank god, he was that handsome, otherwise I would have missed my baby wok. :)))))
          • 手柄上那个套子可以取下来是吗?整个锅(去掉手柄)可以放烤炉里烤?没什么限制?偶早想买一个锅,又可以炒菜,又可以sear牛扒的两面,然后放烤炉里烤,象电视里的厨子一样。

          • 用了a few years,你这锅的coating都没什么scratches?要用木铲炒菜,软布洗锅?
            • the best one I have ever had. threw so many of the pans already, made me really frustrated till this one.
              • 偶也扔过几个了,最可怕的是一个轻轻的non-stick pan,全新的,偶用它煎鸡蛋,整个锅发出很臭很化学的味道,蛋也糊了,偶马上就把它扔出去了。那次以后,偶就不敢随便买锅了。
          • 一般你是要把锅先加热,水烧干,才放油吧?是不是也要注意锅不可以干烧过度?真的是炒鸡蛋可以不放油?
            • I like to make "Liang ban" (Chinese salad????), cucumber and egg , that is my favor part of it. :) certainly, to protect the cookware, you do want to seam (?) it with a little bit oil, a little bit with paper towel
