use money order to pay. you can pay US dollars,
they will exchange it to Canadian dollars for you(in the bank). Then send the money order with your application package

How about opening another account in Canadian banks?
I think some schools only take Canadian funds from Canadian banks.

Many Canadian banks have branches in China. The only disvantage of money order is that if it's lost in the mail, it will be gone. I don't trust Canada Post much, maybe you can try courier service to deliver it.
