Fiorentina with rosemary and lavender butter

2 Florentine steaks of approx. 500 g every
fleur de sel
1 bunch of thyme
Herb butter
2 sprigs of rosemary
½ bunch of chervil
¼ teaspoon of lavender flower
60 g butter, comfortable

Preparation:

For the herb butter, take away the rosemary needles from the twigs. Chop them with lavender flowers and chervil. Combine the mince properly with the butter. Season with lemon juice, salt and pepper. Refrigerate the butter till prepared to be used.

Take away the meat from the fridge 30 minutes earlier than cooking.

Warm the grill over medium warmth. Earlier than cooking the meat, rub it with somewhat fleur de sel, unfold a number of sprigs of thyme over the steaks and grill them on each side (uncommon approx. 14 minutes, pink approx. 22 minutes, properly completed approx. 30 minutes).
