I have started a small test: Picked tomatoes from garden when they were in good condition but green. Then put them into food grade plastic bags where the bottom layer filled with ripened but still fresh apples (or/and bananas). Kept the bags tied or closed loosely but not sealed, and stored the bags at room temperature. After a few days or one week, the tomatoes started to turn red from green gradually.
