1.牛肉(1000g)切火柴盒大的块,洗净,用清水泡30min。然后将牛肉放入锅中加冷水,大火烧开。道掉水,将牛肉洗净。再牛肉放入锅中加冷水(比牛肉高5cm),大火烧开,去掉浮抹,加入姜片(5片),胡椒(1勺),小火炖耙(大约2-3hr,能嚼动,不要太烂)。
