用YEAST发面, 不要同时用BAKING SODA

YEAST发面只要半个多小时到一个小时就发胖了 (温水和面). BAKING SODA就是纯碱, 是中和酸性用的, 不是发面用的. 如果把BAKING SODA和YEAST放在一起, 是发不起面的.

用YEAST发的面不酸 (搁久了才会酸), 所以不用BAKING SODA.

馒头蒸好后不要立刻开盖, 关了火再蒙5分钟, 再接盖, 就不会缩. 加拿大的面粉质量非常好, 馒头包子特好吃.
