俺都是去华人超市买现成的卤料包,将猪手/脚/蹄在开水里不止过一下,而是煮一小会儿,待血沫大量出现后,捞出洗净,放入锅中,加凉水没过猪手/脚/蹄,放入一到两个卤料包,加姜片,料酒,老抽,糖,盐,大火烧开,小火炖至肉烂,大火收汁. 如果喜欢,可以事先泡好并洗干净香菇,花生一起卤.没有卤料包,可用大料,花椒,桂皮代替.味道差不多.
