清蒸鱼的正确做法:用葱白垫底,鱼放上去后撒上姜丝,水大开后才放鱼,锅盖严,大火。一磅半的鱼大约蒸八分钟,打开盖倒掉鱼盘中的水,撒上葱丝盖盖再蒸一分钟出锅。浇上滚油和生抽,趁热吃。
