发面的过程和馒头一样,面发好后,案板上洒面粉,把面团揉大约15分钟,这时面就不粘手乐,然后切成N个小面团,用擀面杖把它们擀成圆形,我第一次失败的原因,就是不懂得做包子皮是要用擀面杖的,而是用手捏!(xixi, 这个错误很愚蠢)擀包子皮的窍门是要中间厚四周薄。包子包完之后,一定要等20分钟以上再上笼蒸,蒸好后,一定要等10分钟再掀盖子,这样子做出来的包子保证个个长的漂亮饱满,不掉底,也不会缩回去。
