西芹虾仁

(皮皮)
材料:10只去肠线的虾,洗净备用。西芹杆6-8片,用削皮刀将外面的那层薄薄削皮。切成寸段备用;
水淀粉少许
锅内热油,先将虾仁爆炒出红色,出锅,倒入西芹段翻炒。然后加入虾仁,最后加入少许的水淀粉,要很清,放少许盐,出锅装盘。
技术要点:芹菜的备制很关键。火候和勾芡。
