我的感觉,这里的肉味道都很重,所以调料上要多下工夫,国内那些清淡的肉菜是不太适宜的,首先料酒一定要放,解腥气,另外葱姜也不能少,也用来去腥膻,抄之前用淀粉,生抽抓一抓,这样炒出来的肉几乎没有腥膻味。如果是墩或烧,调料更要放足。个人经验,仅供参考。
