四川凉面的做法

再烫一些绿豆芽,用我做蒜泥白肉的调料(减一勺糖,加两勺醋和两勺酱油,去掉花生)与feifei的凉面拌均匀,就是一碗正宗的四川凉面。

我所知道的凉面做法有一些不同。
滚水,面煮硬一点,捞出后,拌入菜油(如果是生油,事先煎熟),用一个风扇,开大风,将面条夹起,吹凉, 拌入调料和配菜。

单说凉面的‘俏头’---绿豆芽是好的, 钢管菜(not related to dance) 也不错, 另外, 麻油海带丝也是上品。
