For dried purslane, you can cook it with any of meat, egg, fish, tofu, potato, bitter melon, winter melon, opp squash, eggplant, bamboo shoots, etc. Or, you can just cook it alone by steaming it or making soup.
In my memory, the dried purslane made by my mom is one of the most delicious foods I had. But I have no experience on making dried purslane yet. 😊
