  • Carrot and coconut curry with papaya salad

    Thoran is an Indian vegetable curry originating from Kerala. Our carrot and mango model is accompanied with a papaya salad.

    Components

    Fundamental course For two individuals

    2 carrots
    1 ripe mango
    1 small onion
    three cm of ginger
    1 chilli
    ½ bunch of coriander
    1 tablespoon of coconut oil
    100 g of grated coconut
    2 tablespoons of curry, e.g. curry Madras
    ca. 2 l of water
    salt
    250 g of papaya, weighed and cleaned
    50 g of spinach for salad
    ½ bunch of mint
    2 tablespoons of rice vinegar
    pepper from the pepper mill
    30 g of salted and toasted cashew nuts

    The way to proceed

    Preparation:
    ca. 40 minutes

    Grate the carrots in a bowl with the rösti grater. Peel the mango and lower the pulp into cubes of the identical dimension. Halve the onion and lower it into strips. Chop the ginger. Halve the chilli pepper, take away the seeds and chop it. Chop the coriander leaves and stems.

    Warmth the oil in a big pan. Brown the onion and ginger for approx. 5 minutes. Add the grated coconut and carrots and brown for approx. 5 minutes. Add the curry, fry it for two minutes with all of the substances. Add the mango and simmer over medium warmth for 10-15 minutes. Add the water somewhat at a time, lowering it occasionally. Salt.

    In the meantime, lower the papaya into cubes, the spinach into strips. Coarsely chop the mint leaves. Combine the mint with the papaya, spinach, cashew nuts and rice vinegar. Salt. When the curry is cooked and the liquid has nearly utterly evaporated, add the coriander. Season with salt and pepper. Serve the thoran with papaya in a salad. Garnish with coconut chips as desired.

    Thoran is a dish from Kerala, a southern Indian state, ready with grated greens (historical cabbage), coconut and spices, stewed with no or little or no water added. If accessible, you can too use a contemporary coconut. First, you should extract the pulp and scale back it into strips.
